That's exactly why I created this recipe: it's just as satisfying but without the sugar overload. With your Thermomix, you can whip up this better-for-you version in no time!

  • Serves: 10-12 slices
  • Time: 50 min
INGREDIENTS
• 100g raw almonds
• 140g cassava flour or plain gluten free flour
• 1 tsp bicarb soda
• ½ tsp salt
• 2 tsp cinnamon
• 400g ripe banana
• 80g unsalted butter, soft
• 2 eggs
• 75g maple syrup
• 10g vanilla
Cinnamon Crumble
• 1 tsp monk fruit / coconut sugar / rapadura sugar
•½ tsp cinnamon
 
 
METHOD

1. Preheat the oven to 180°C fan forced and line a loaf tin with baking paper.

2. Place the almonds and the flour in the mixing bowl. MILL / 10 SEC / SP 9.

3. Add bicarb, salt, cinnamon. MIX / 6 SEC / SP 3.5. Set aside and don't wash the mixing bowl.

4. Add banana, butter, eggs, maple syrup and vanilla. MIX 9 SEC / REVERSE / SP 4.

5. Add dry ingredients back in MIX / 10 SEC / SP 3. Scrape down the sides and repeat 7 SEC / REVERSE / SP 4.

6. Pour into loaf tin and sprinkle with cinnamon and sugar of choice. Optionally also top with banana pieces or slices.

7. Bake for 40 minutes or until an inserted skewer comes out clean and the top is golden.

8. Allow to cool completely before slicing.
